Budget-friendly and delicious

Cooking as a flat is a good way to spend time with each other after a long day on campus. We've put together some easy, simple recipes for you to cook and enjoy together:

Gyros-style chicken wrap

  • 400g plain flour
  • 15g baking powder
  • 350g Greek-style yoghurt
  • 6 tbsp olive oil
  • 2 tsp honey or maple syrup
  • 12 boneless chicken thighs
  • 2 tsp cumin
  • 2 tsp parsley
  • 2 tsp oregano
  • 2 tsp garlic granules
  • 2 tsp rosemary
  • lettuce, shredded
  • cucumber, sliced
  • tomato, sliced
  • feta, crumbled
  • hummus
  • tzatziki
  • red onion, thinly sliced
  • 450-600g frozen chips or fries


Method:

  1. To make the flatbread dough, mix the flour, baking powder and yoghurt in a large bowl to form a dough. Knead briefly and leave to rest.
  2. Preheat the oven to 220°C.
  3. For the chicken, mix all of the ingredients, except the chicken, in a large bowl. Place the chicken thighs into the marinade and gently coat the meat.
  4. Place each thigh evenly on a large baking tray and put in the oven until they're crisp and cooked. (Shred once cooked).
  5. Meanwhile, pop the chips or fries in the oven. You can either leave them as they are or, when they're cooked, you can toss them in a bit of oregano, salt and oil.
  6. While the chips and chicken are in the oven, cut the flatbread dough into 4-6 pieces and roll out on a lightly flour-dusted surface into thick ovals. If you don't have a rolling pin, you can use an empty wine/spirit bottle!
  7. Fry each flatbread in a large, dry frying pan until brown on both sides. Keep warm under a clean tea towel until all the flatbreads are cooked and everything else is ready. The steam created under the tea towel makes them easierto wrap around the fillings.
  8. Serve the shredded chicken, flatbreads and chips along with the topings for everyone to help themselves.

Piri-piri chicken wings, wedges and corn traybake

  • 2 tbsp piri-piri seasoning
  • 1 tbsp plain flour
  • 3 tbsp vegetable oil
  • 4 potatoes, unpeeled and cut into wedges
  • 1kg chicken wings
  • 2 corn on the cobs, cut in half to make 4 mini ones
  • salt
  • 1 lime, cut into wedges, to serve

Method:

  1. Preheat the oven to 200°C. Stir the piri-piri seasoning and flour together in a small bowl.
  2. Place 1 tbsp oil in a large bowl, add the potato wedges and toss well to coat. Season with salt. Transfer to a large baking tray.
  3. Add 1 tbsp oil to the bowl, then add the chicken wings, turning until coated. Sprinkle over the piri-piri flour mix, turning again until evenly coated.
  4. Place the wings in the tray with the wedges, trying to ensure that everything sits in an even layer. Roast for 20 minutes.
  5. Brush the corn with the remaining oil. Turn the chicken and potatoes, then nestle in the corn and return to the oven for a further 15-20 minutes until the chicken and potatoes are cooked through and golden. Serve with the lime wedges for squeezing over.

Sausage bake gnocchi

  • 1 red pepper, deseeded and cut into chunks
  • 1 yellow pepper, deseeded and cut into chunks
  • 1 orange pepper, deseeded and cut into chunks
  • 250g gnocchi
  • 1 tbsp olive oil
  • 6 pork sausages
  • salt and black pepper

Method:

  1. Preheat the oven to 220°C.
  2. Toss the peppers, gnocchi, olive oil and a generous amount of salt and pepper on a large baking tray.
  3. Place the sausages on the tray. Roast for 25 minutes, or until the sausages and gnocchi are golden-brown and the peppers are soft and have started to brown around the edges.
