Delicious food to eat in hot weather!

When the weather starts to get warmer, a hot meal might not sound too appetising. Here are some cool, summer recipes that don't require turning your oven on and warming up your kitchen:

Chicken Caesar Wraps

It's simple and still gives you a satisfying full meal!

Ingredients:

  • Shop-bought cooked chicken (or leftover if you have any)
  • Shredded romaine lettuce
  • 3 tbsp Caesar dressing
  • Shaved parmesan
  • Large tortilla wraps

Method:

  • Shred the chicken into a bowl.
  • Stir in the dressing and parmesan.
  • Load into a tortilla wrap with lettuce, roll tightly and slice in half.

2. Loaded Mediterranean Hummus Bowls

Chickpeas are incredibly affordable and a plant-based protein.

Ingredients:

  • 1 tub of hummus
  • 1 tin of rinsed chickpeas
  • Diced cucumber
  • Cherry tomatoes
  • Feta Cheese
  • Pita bread or a bag of tortilla chips

Method:

  • Smear a thick layer of hummus onto a plate/bowl.
  • Top with the chickpeas, vegetables and crumbled/cubed feta.
  • Serve with pita/tortilla chips on the side for dipping.

3. Zesty Black Bean & Avocado Salad

It's high in fibre, vegetarian, and great for meal prepping.

Ingredients:

  • 1 tin of black beans (drained and rinsed)
  • 1 tin of sweetcorn (drained)
  • 1 diced avocado
  • 1 diced tomato
  • Zesty Italian dressing
  • A squeeze of lime

Method:

  • Mix the black beans, sweetcorn, and tomatoes in a bowl.
  • Toss with the dressing and lime, and gently fold in the avocado so it doesn't get mushy.
  • Eat with tortilla chips or on its own.

4. Italian Deli Pinwheels

They're fun to make, and you can pick whatever deli meats you like!

Ingredients:

  • Large flour tortillas
  • Cream cheese
  • Sliced ham
  • Salami
  • Pepperoni
  • Fresh Spinach

Method:

  • Spread a thick layer of cream cheese over the tortilla.
  • Layer on the meats and spinach.
  • Roll tightly into a log and use a knife to slice into bite-sized 'pinwheels'.

Not only do these recipes help you stay cool, but they also save money. They require little time and little effort, perfect for days when it's far too warm to do anything ☀️
